Oenology

The science of wine and winemaking — everything that happens once the fruit reaches the cellar.

Oenology (US: enology) is the science of wine and winemaking: fermentation microbiology, wine chemistry, sensory analysis, stabilisation, and the practical craft of turning grape juice into a finished, stable bottle. Its counterpart in the vineyard is viticulture, and most formal wine degrees teach the two together.

An oenologist is a qualified wine scientist. The overlapping title winemaker is a job description rather than a qualification — plenty of excellent winemakers have no formal training, and plenty of oenologists work in laboratories rather than cellars.

In practice

  • Fermentation management: yeast selection, nutrition, temperature, diagnosing and restarting stuck ferments.
  • Analysis: sugar, acidity, pH, alcohol, sulfur dioxide, volatile acidity, microbial screening.
  • Stabilisation and clarification: fining, filtration, cold stabilisation against tartrate crystals.
  • Blending and maturation decisions, and the sensory work behind them.

  • The consulting oenologist, an institution in Bordeaux — Émile Peynaud and Michel Rolland being the famous names.

What oenology changed

The 20th century turned winemaking from a craft with a high failure rate into a controllable process. Four advances did most of the work:

  1. Temperature control — refrigeration made clean, aromatic white wine possible in warm climates.
  2. Microbiology — understanding Saccharomyces, and later Oenococcus, turned fermentation and malolactic conversion into deliberate choices rather than accidents.
  3. Sulfur dioxide chemistry — the free/bound/molecular distinction gave winemakers real control over oxidation and spoilage.
  4. Analytical instruments — cheap, fast measurement of everything that matters, in the cellar rather than a distant lab.

The counter-argument

The critique of technical winemaking is that it flattens difference: the same yeast strains, the same enzymes, the same oak regimes produce wines that taste alike wherever they are made. The natural wine movement is in large part a reaction to exactly that. The reasonable middle is that oenology defines the floor of wine quality; where the ceiling sits is still decided in the vineyard.
