Inert maturation

Ageing wine in a vessel that keeps oxygen out — stainless steel, and the fresh, fruity style it protects.

Inert maturation is ageing wine in vessels that admit essentially no oxygen — stainless steel above all, but also glass-lined and epoxy-lined tanks, and bottles under screwcap. The aim is to keep the wine exactly as fermentation left it: primary fruit, freshness, bright colour.

It is the opposite approach to oxidative maturation, and the choice between them is one of the clearest style decisions a winemaker makes.

In practice

  • Stainless steel is non-porous, easy to clean, temperature-controllable and cheap by comparison with oak.
  • Tanks are kept topped up and often blanketed with inert gas — nitrogen, argon or CO₂ — so ullage never turns into oxygen exposure.
  • Sulfur dioxide is maintained as a chemical backstop.
  • The style is often called protective or reductive winemaking, though taken too far it produces genuine reduction faults.

Many wines use both: part of the blend in steel to hold the fruit, part in oak for structure and depth, reunited at blending.

Reduction — the failure mode

Exclude oxygen too completely and the wine turns reductive: struck match and flint at low levels (some winemakers court this deliberately in white Burgundy), rotten eggs and boiled cabbage at high ones. The remedies are a splash of air — racking, a stir, an aerative transfer — or, at the table, a vigorous decant.
