Oxidative maturation
Ageing wine with deliberate oxygen contact — usually in wood — to build nutty, spicy complexity.
Oxidative maturation is ageing wine in deliberate contact with small, controlled amounts of oxygen — almost always in wood, which is porous enough to admit a trickle through staves, bung and the routine work of racking and topping up.
The result is a slow transformation: tannins polymerise and soften, colour stabilises then browns, and primary fruit gives way to nutty, spicy, dried-fruit and caramel notes. Done well, this is complexity; done carelessly, it is oxidation as a fault.
In practice
- Oxygen ingress is measured in milligrams per litre per year — a barrel admits perhaps 20–40 mg/L/year; a steel tank almost none.
- New barrels admit more than old ones, and small barrels more per litre than large ones.
- Racking, pumping and lees stirring all add oxygen on top of what the vessel gives.
- Micro-oxygenation delivers the same effect through a controlled gas line in a tank — cheaper, and much criticised when overdone.
Where you'll meet it
- Fortified wines: Tawny Port, Oloroso Sherry, Madeira — the most extreme versions.
- Traditional Rioja Gran Reserva, aged for years in American oak.
- Vin Jaune from the Jura, and rancio styles across southern Europe.
The flavour ladder

Oxidative and biological ageing
Sherry demonstrates both mechanisms side by side:
- Biological — under a veil of flor yeast, which consumes oxygen and keeps the wine pale and tangy. Fino, Manzanilla.
- Oxidative — fortified higher so flor cannot survive, then aged in contact with air. Oloroso: dark, nutty, dry.
- Both, in sequence — Amontillado: under flor first, then oxidatively once the veil dies.
