Oxidation

What oxygen does to wine — helpful in small, controlled doses, ruinous in large ones.

Oxidation is the reaction between wine and oxygen. Phenolic compounds and ethanol oxidise into acetaldehyde and related molecules, colours shift — whites deepen towards gold and brown, reds go brick and then tawny — and fresh fruit aromas give way to bruised apple, nuts, caramel and sherry.

The crucial distinction is controlled versus uncontrolled. Tiny, deliberate exposures during maturation build complexity and stabilise colour. Unwanted exposure — a failed cork, a half-empty bottle left overnight — flattens a wine and eventually turns it stale.

In practice

  • Enters through racking, pumping, barrel staves, bad closures and ullage.
  • Managed with sulfur dioxide, inert gas blanketing, topped-up vessels and cool cellars.
  • The opposite handling is inert maturation — stainless steel, no oxygen, fruit preserved.
  • Some styles are built on it: Sherry, Tawny Port, Vin Jaune, Madeira, and traditional Rioja.

Where you'll meet it

  • As a fault: a white that has turned deep gold with a flat, nutty nose.
  • As a style: fortified wines matured deliberately in contact with air.
  • In service: the reason an opened bottle is worth finishing within a day or two, and the reason decanting is a judgement call.

The tell is freshness. A deliberately oxidative wine is still lively and precise; an oxidised one has lost its definition.

Preventing it in the cellar and at the table

  • Keep vessels topped up — headspace is the enemy.
  • Handle young whites and rosés reductively; they have the least phenolic protection.
  • At home, re-cork and refrigerate, or use a vacuum stopper or inert-gas spray. Half-bottles work better than either: less air per millilitre of wine.
